Nyonya Sticky Rice Dumplings (Nyonya Chang) 娘惹粽

White Rice 白糯米 :
- 600g 糯米 Glutinous Rice
- 1tsp 鹽 Salt
- 1/4tsp 白胡椒粉 White Pepper
- 1Tbsp 植物油 Cooking Oil
- 1Tbsp 油蔥酥 Fried Shallot
Blue Rice 藍糯米 :
- 600g 糯米 Glutinous Rice
- 1tsp 鹽 Salt
- 1/4tsp 白胡椒粉 White Pepper
- 1Tbsp 植物油 Cooking Oil
- 60朵 蝶豆花 Butterfly Pea Flowers
Filling 餡料 :
- 600g 豬絞肉 Ground Pork Meat
- 30g 乾蝦米 Dried Shrimp
- 15朵 乾香菇 Dried Shiitake Mushrooms
- 100g 冬瓜糖條 Candied Winter Melon Strips
- 60g 紅蔥頭 Shallot
- 30g 大蒜 Garlic
- 1Tbsp 豆瓣醬 Fermented Bean Paste
- 1Tbsp 醬油 Soy Sauce
- 1tsp 鹽 Salt
- 1/4tsp 白胡椒粉 White Pepper
- 1Tbsp 香菜子粉 Coriander Powder
- 3Tbsp 植物油 Cooking Oil
Wrapping 包材:
- 30片 香蘭葉 Pandan Leaves
- 60葉 粽葉 Bamboo Leaves
- 30條 粽繩 Dumpling Strings
Cook for about 1 hour, depending on size. 水煮約1小時。
