Italian Soft Amaretti 義式杏仁軟餅
Makes about 20 amarettis
Ingredients :
- 30g Egg White 蛋白
- 80g Caster Sugar 細砂糖
- 1g Salt 鹽
- 3g Almonds Extract 杏仁精
- 100g Almonds Powder 杏仁粉
- 50g Icing Sugar 糖粉
160°C(320°F) for 20 minutes
Directions :
1. Make a meringue with egg white, sugar and salt.
2. Add almond extract and almonds powder, combine well.
3. Cover sticky dough with plastic wrap and fridge for 1 hour.
4. Devide the dough into 20 balls and roll into icing sugar.
5. Bake in preheated oven at 160°C(320°F) for 20 minutes or
until lightly golden crust and still slightly soft when pressed.
做法 :
1.蛋白,細砂糖,鹽打發成蛋白霜。
2.加入杏仁精和杏仁粉,攪拌均勻。
3.粘麵糰密封放入冰箱冷藏1小時。
4.麵糰分成20等份,粘上糖粉搓成圓型。
5.放進已經預熱至160℃的烤箱中烘烤約20分鐘,
或至上色且壓下時還有一點鬆鬆軟軟即可。
