Crispy Coconut Roll 超脆椰奶蛋卷

 





Crispy Coconut Roll


Makes 10cm*60 rolls
 
Ingredients:
2 Eggs, 120g Sugar, 15g Coconut Sugar, 200g Coconut Milk,
1/4tsp Salt, 1/4tsp Ground Cinnamon, 125g Rice Flour, 10g Tapioca Starch. 
 

Method:
1.Combine all ingredients in a mixing bowl and mix well until sugar has dissolved.
2.Strain the batter and let it rest for an hour.
3.Preheat the roll maker according to the manufacturer's instructions.
4.Scoop 1 Tbsp of batter onto the mold and cover, bake until golden brown.
5.Remove and immediately roll up the biscuit.

6.Cool on the rack and store in an air-tight container.

Sesame Egg Rolls

Ingredients:
4 Eggs, 100g Sugar, 100g Melted Butter, 1/4tsp Salt, 1/2tsp Lemon Juice,
120g All Purpose Flour, Sesame Seeds.
10g Cocoa or 5g Matcha Powder.
