Brazilian Cheese Bread (Pão de Queijo)
巴西起司麻糬麵包

材料 :
•150g 鮮奶 Milk 75%
•50g 奶油 Butter 25%
•1/2tsp 鹽 Salt 1.5%
•200g 木薯粉 Tapioca Starch 100%
•1個 雞蛋 Egg 28%
•40g 帕馬森起士粉 Grated Parmesan Cheese 20%
•40g 綜合乳酪絲 Mixed Cheese 20%
180℃/20minutes
做法 :
1.鮮奶+奶油+鹽,一起放入鍋中煮至滾開。
2.倒入已過篩的木薯粉中,攪拌均勻。
3.等麵糰降溫(避勉蛋熟掉),雞蛋分次加入拌勻。
4.加入起士粉和乳酪絲,攪拌均勻。
5.麵團分割成15個,麵團很粘,手上油再搓成圓型。
6.烤盤上油(鋪烤盤紙),間隔整齊排入烤盤。
7.放進已經預熱的烤箱中烘烤,180℃/20分鐘至金黃色即可。

150g sour manioc starch (cassava starch/tapioca flour)
250g sweet manioc starch (Bobs Red Mill)
2 large eggs
220g monterey jack cheese
110g grated parmesan cheese
350F/25-30mins.
